Orange Almond Marmalade

I’ve never considered myself a marmalade guy, but my roommate made this for a special occasion, and it was phenomenal.

Servings

Makes about 1 cup.

Ingredients

  • 5 whole mandarin oranges
    • Tangerines work too
  • 100ml sherry
  • 200ml water
  • 200g sugar
  • 100g almonds
  • 1 Cinnamon stick

Special Equipment

  • Blender

Steps

  1. Slice oranges thinly.
  2. In a small pot, add orange slices, cinnamon stick, sherry, and water
  3. Boil for 30 minutes
  4. Add sugar and almonds
  5. Reduce heat, and simmer for another 30 minutes
  6. Remove from heat, and allow to cool for 5 minutes
  7. Transfer to a blender, and pulse until almonds are desired size
