Classic Peanut Butter Cookies

Just a classic peanut butter cookie recipe. Not much else to say.

Makes about 16 cookies

Ingredients

  • 1 cup smooth peanut butter
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1 cup white sugar
  • 1/4 cup white sugar (for rolling)

Special Equipment

  • None, but an electric mixer of some kind would be helpful

Steps

  1. Preheat oven to 350°F
  2. Mix peanut butter, egg, vanilla, and 1 cup of sugar until smooth
  3. Scoop and mold into 1 inch balls of dough
  4. Place dough ball into sugar and roll to coat evenly
  5. Place on parchment-lined baking sheet with approximately 1 inch of space between cookies
  6. With a fork, press flat-side down on top of the cookies at opposing angles, forming a small grid
    • Press firmly enough to leave a mark, but do not flatten the dough unless desired
  7. Bake 10 - 12 minutes
  8. Cool on the pan for 1 - 2 minutes, then move to a wire rack for cooling
